Producing rennet to separate the curd and whey (it-Tames) The Ager Foundation - Gozo, encourages its farmers to revert to the old-age method of producing rennet naturally basically from a lamb's stomach - in maltese known as "it-tames". This way we are preserving a lost tradition while demonstrating how the natural way of making the Gozo cheeslets (?bejniet) is much better than buying the rennet from a chemist. This is a typical example of a 'Slow Food' process of which the Ager Foundation is a member of.
