They're a bit of a pain to make, but daifuku are worth it. So yummy. You'll need: 1 cup mochiko 1/4 cup sugar 2/3 cup water (minus a few tablespoons if you'd like it less sticky) desired filling (anko, raspberries, other fruit pieces, peanut butter, chocolate chips, etc.) Mix mochiko, sugar, and water together. Microwave for two minutes. Microwave again for another two minutes or until the mochi lump begins to inflate. Remove from microwave and stir. Dust work surface and hands with cornstarch. Tear a lump of mochi from the mass and flatten into a disc. Add filling. Pinch close. Roll daifuku into a ball. All done.
